Vegetable wraps; A Feast for Your Taste Buds
Wraps are a great way to get your vegetables in. Use large leaves from romaine lettuce or cabbage as a base and fill them with a colorful mix of raw or baked vegetables. Think bell peppers, zucchini, carrots, and avocado. Add some hummus or guacamole for a creamy texture without dairy.
Tip: Make it extra fun by decorating your wraps with edible flowers or a pinch of herbs.
A healthy evening meal with delicious soups; Warm and Comforting
Soup is always a good choice for a healthy dinner or lunch. It's easy to make and you can vary it endlessly. Try, for example, a creamy pumpkin soup without milk. Use coconut milk for a silky smooth texture and add spices like ginger and turmeric for extra flavor and health benefits.

– 1 onion, chopped
– 2 cloves garlic, minced
400 ml coconut milk
– 500 ml vegetable broth or bouillon cube
– Ginger, turmeric, garam masala (or curry powder), pinch of cayenne pepper
– Optional salt and pepper
Sauté the onion, garlic, and herbs until the onions are translucent. Add the pumpkin and sauté briefly. Add the broth and simmer for 20 minutes. Add the can of coconut milk, purée the soup, and season with salt and pepper.
Tip: Serve the soup with a few homemade croutons made from gluten-free bread. Or serve it with seed crackers, tapenade, hummus, or guacamole with a nice salad.
